Carinthian ‘Eisreindling’ (ice-cream cake) with a cranberry cream A dreamy dessert, perfect for cold winter days. For the ‘Eisreindling’: 2 tbsp honey, 70 g whole walnuts, 70 g raisins, a few tbsp rum, 3 eggs, 180 g sugar, 1 packet of vanilla sugar, pinch of salt, 1 tsp cinnamon, 400 ml whipped cream. » Preparation: Caramelise the honey in a pan, add the walnuts and caramelise. Remove the mixture from the pan and leave to cool. In the meantime, place the raisins in some rum. Beat the eggs, sugar, vanilla sugar and pinch of salt in a bowl together over a pan of lukewarm water until foamy. Remove the bowl from the steam and continue to beat until the mixture has cooled. Now add the cinnamon. Beat the cream and then fold into the foam mix. Roughly chop the caramelised walnuts and fold into the mixture together with the infused raisins. Place in a mould and leave in the freezer overnight. For the cranberry cream: 70 g cranberries, 60 ml whipped cream, 30 g honey, 1 tbsp lemon juice. » Preparation: Stir together the honey and lemon juice until creamy, fold in the whipped cream and carefully mix in the cranberries. Before serving the dessert, stand the mould briefly in warm water and tip the ‘Eisreindling’ from the mould. That’s right, we have been very busy! DIE POST is getting a casual new look. We have teamed up with our interior designer Britt Jordan and fully refur- bished the public areas at DIE POST - the reception, bar, buffet and restaurant. So what’s changed? There will be a trendier and more casual Alpine style throughout. What’s the same? The extremely cosy ambience. You are sure to be surprised by what we have come up for our concept of ‘DIE POST – simply casual’. So what else is NEW in the village? The St. Kathrein thermal spa has been fully refurbished. The baths are really a sight to behold and kids can look forward to trying out Carinthia’s longest slide. The cable car companies have implemented numerous improvements to upgrade the quality of the pistes across the ski resort, guaranteeing even more skiing fun.
